Cranberry Buttermilk Muffins

ingredients

1 large egg
1 cup buttermilk
1/3 cup vegetable oil
1 cup flour (white or whole wheat)
1 1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup quick-cooking oats
1/2 cup brown sugar, packed
1/2 cup nuts, chopped
1/2 cup dried sweetened cranberries, chopped
 

directions

Beat egg, buttermilk and oil with a whisk. Add remaining ingredients and stir just until blended. Spoon into muffin cups prepared with non-stick spray. Bake at 350 degrees F for about 25 minutes, testing with a toothpick.
